How Many Claws in a Pound?




Medium claws (good for appetizers) run 6 to 7 per pound. For an appetizer, one pound per person should be considered.




Large claws (an excellent entrée) run 4 to 5 per pound. For an appetizer, one pound should feed one person. For an entrée, one and a half pounds per person.




Jumbo claws (an even better entrée) run 2 to 3 per pound. Like the large claws, one and a half pounds should feed one person.




Colossal Claws...now these are big! 7 ounces and over. If you are a Stone Crab lover, you owe a few of these to yourself.

Remember, if someone is a big seafood eater, these will be a treat and you may consider more than a pound per person.



How to Crack Stone Crab Claws

There are many ways to crack a Stone Crab claw... almost all of them very messy! Our favorite way is to lay the claw in the palm of our hand and whack it with the heavy end of an all-stainless butter knife. This takes practice, but eventually you will be able to pull the meat right out of the shell. Another less messy way is to place the claw in a zip lock bag and hit it with a wooden mallet. Either way, be very careful... the broken claws can be very sharp.

Reheating Stone Crab Claws

Stone Crab claws are always shipped cooked. All you need to do to serve them is place the claws in a pot of warm water until they are warm all the way through (10 minutes or so). There is no need to boil the claws again.

What to do with Leftover Claws

If you have any claws left over, put them in an open container and keep them in the coldest part of your refrigerator. It is best to not re-heat any claws you plan on saving for later. They should be placed right in the freezer where they will keep for up to 6 months.
